#19 – Escamoles – Mexico
This dish may look to someone unfamiliar with the Mexican cuisine as a grain salad; But this isn’t an actual grain salad, Escamoles is a meal whose main ingredient is ant larvae.
Mexican people often call Escamoles by nickname “insect caviar.” Escamoles are considered by Mexicans as a delicacy and the consumption of Escamoles has its roots from the time of Aztecs. The eggs used as an ingredient of this dish are harvested from the roots of agave and maguey plants. The tiny larvae that make up this meal can be added to tacos, omelets, or can just be eaten on their own.
